Veganism had been a huge taboo subject for me until a couple months ago…

This is what happened: My boyfriend and I were scrolling down documentaries in Netflix, when we came across “Cowspiracy”, I stopped at that documentary because I had heard a lot of good reviews so we watched…
And it was completely shocking, not all the reality around meat production and how it pollutes our planet more than anything else but what was more shocking is how two well educated (college and masters degrees) adults had no clue about all this facts, It almost felt that it couldn’t be true… until we investigated:

Yes, 51% of all world wide CO2 (green house emissions) come from meat and dairy production (livestock)!

Yes, livestock represents 3times I mean 3X the pollution of all the cars, all the flights, all the boats, all the trains in the world combined!

Yes, 2,500 gallons of water are needed to produce 1 pound (450 gr) of beef.

Yes, Livestock is responsible for 65% of all human-related emissions of nitrous oxide; a greenhouse gas with 296 times the global warming potential of carbon dioxide, and which stays in the atmosphere for 150 years.

And I could go on and on, I recommend everybody to watch this documentary, not to become vegan or not, just to watch it to have the knowledge because we have grown so ignorant of so basic knowledge for generations.
This is when my partner and I decided to try to become vegan, little by little we transitioned by first only cutting off 100% of our beef consumption, and learning more about vegan dishes and how to get all the nutrients needed for a healthy fit life.

It has been quite a journey(easier than we both had imagined) and currently we are flexitarians (will explain in detail on an other post) but im short is that we are currently eating: 80% of our food is fully plant based, 10% includes dairy(eggs, milk) and 10% includes fish & chicken. I know it is not 100% vegetarian yet but vegan experts told us that it is a one year transition and by cutting off beef we are doing half of the impact in our CO2 footprint.
So here we are, the results: it has been awesome (with some downs like when I didntÒ€ℒt have enough probiotics on my stomach) but most of it has been great, we have more energy, we feel stronger, we have better digestion and we have been so amazed by how easy it is to go for vegan or vegetarian options at our favorite restaurants, there are plenty! and best of all I have learned tons of new delicious recipes! (I will share some of my favorite recipes here later on)

p.s. YES Vegetables and legumes have TONS of protein! some even more than meat!

p.s.2. Don’t worry that much about Trump pulling USA out from the Paris agreement on global warming, YOU and ME have the power to have a greater impact, literally change your square meeter, feed your family with more plant based meals and you will be making a bigger impact than any politician out there.
